About this pepper

Aji Caballero, meaning gentleman pepper, is a hot Capsicum frutescens chilli native to Puerto Rico. Plants typically grow to a height of approximately 0.9 to 1.2 metres. The fruits are small, usually around 1.9 centimetres long and 0.6 centimetres wide, and grow upright on the plant, which is characteristic of this species.

The pods mature from green to orange and finally to red. Aji Caballero is traditionally used in Puerto Rican cuisine and is especially well known as the primary chilli used in pique sauce.
