Ají Chay
Ají Chay, sometimes shortened to Chay, is a mild Cuban seasoning pepper grown more for flavour, crunch, and everyday kitchen use than for heat. Exact-name seller descriptions describe smooth-skinned pods up to about 9.0 cm long on plants roughly 60.0 to 90.0 cm tall. Flavour is commonly described as sweet, slightly apple-like, annuum-like, and crunchy, and the pepper is regularly recommended for drying, grilling, pickling, and general cooking.
Its cultural role is one of the strongest parts of the documented history. Cuban food references place ají chay in sofrito and other daily cooking, and ethnobotanical writing preserves a Cuban verse mentioning ají chay as a preferred pepper for everyday chicken dishes. Other Cuban sources list it among the non-hot annuum peppers used in the country, alongside types such as cachucha and other cooking peppers. This fits the broader pattern of ají chay being a household seasoning chilli rather than a high-heat variety.
Historically the pepper is not just a modern shop label. Cuban agronomy sources document Ají Chay as a recognised cultivar group present in markets and agricultural systems. A Havana market study recorded Ají Chay appearing throughout the year and being especially common in October, and later research used the cultivar Chay L-3 as a commercial control line. A 2024 INIFAT summary reports that Chay L-3 still occurs in more than 70 percent of surveyed Cuban municipalities, indicating the line remains widely cultivated.
The main inconsistency online concerns identity in the seed trade. Some sources treat ají chay almost like a Cuban name for cubanelle-type frying peppers, while Cuban agronomy literature distinguishes Ají Chay and the Chay L-3 line as specific Cuban cultivar material. The name also varies regionally within Cuba, where it can be called Tarro de chivo, Ají placero, or Ají sazonador. The pepper itself is clearly established in Cuban agriculture, but the naming exists within a complex regional naming system rather than a single clean international catalogue identity.
