Ají Chombo
The Aji Chombo is a hot Capsicum chinense pepper native to Panama. It is closely related to habanero and Scotch bonnet peppers, sharing a similar fruity flavour profile and pungency. The name Chombo is derived from a Panamanian term associated with Afro-Caribbean cultural heritage.
The pepper was introduced to Panama by Antillean migrants and has since become an integral part of Panamanian cuisine. Pods typically measure around 2.5 to 3 centimetres in length and have smooth, waxy skin. They ripen from green to bright red and deliver a combination of fruity sweetness and intense heat.
Aji Chombo is a key ingredient in Panamanian hot sauces, commonly known as Chombo sauce. These vinegar-based sauces are widely used throughout the country, particularly along the Atlantic coast, reflecting the pepper's strong cultural and culinary significance.
