About this pepper

The Aji Cristal is a Capsicum baccatum chilli originating from Curico, Chile. The pods are pendant-shaped and typically measure between 7.5 and 10 centimetres in length and around 2.5 centimetres in width. They ripen from light green to pale yellow and finally to an orange-red colour at full maturity.

Heat levels average around 30,000 Scoville Heat Units. This cultivar is widely used in Chilean cuisine, most notably in the condiment pebre, which commonly includes Aji Cristal peppers alongside ingredients such as olive oil, garlic, and coriander. Plants are known for their prolific yields and extended fruiting period, and the flowers display the characteristic white petals with green or yellow markings typical of Capsicum baccatum.
