Ají Peruvian
Aji Peruvian is a Capsicum baccatum chilli from Peru and is recognised as a traditional named aji type. It produces elongated pods typically about 6.0 to 7.0 cm long and approximately 1.0 to 1.5 cm wide.
Pods change colour as they mature, beginning creamy white, then shifting through orange, and finishing bright red at full ripeness. Walls are relatively thin, consistent with many baccatum varieties.
Heat is commonly reported within a broad range of 1000 to 30000 SHU. A working value of 30000 SHU reflects the upper central range most often cited in seed listings. There are no widely published independent laboratory tests specific to this variety, and reported figures come mainly from grower and seller descriptions.
