Ají Pineapple
Aji Pineapple is a Capsicum baccatum chilli originating from Peru. The term “aji” is the Spanish word commonly used for chilli peppers throughout much of South America. This variety produces elongated, pendant-shaped pods that typically measure between 5 and 8 centimetres in length. Pods mature from green to a bright yellow colour.
The flavour is notably fruity and sweet, with a citrus-like character often compared to pineapple. Plants have a bushy growth habit and are known for high productivity, producing large numbers of pods over the growing season. As with other Capsicum baccatum varieties, the flowers are white to cream in colour and commonly display green or gold markings on the corolla.
In Peruvian cuisine, Aji Pineapple is used to add moderate heat and a distinct tropical flavour to a range of traditional dishes.
