About this pepper

Ancho 211 Hybrid is a medium-heat Capsicum annuum developed as a hybrid cultivar within the ancho and poblano group. It was bred to improve pod uniformity, yield, consistency and heat compared to traditional open-pollinated ancho types.

Pods are pendant and heart-shaped, typically 4–5 inches long and 2–2.5 inches wide, maturing from dark green to red. The walls are thick, making the pepper suitable for stuffing, roasting, grilling, drying and grinding into powders and sauces.

Ancho-type peppers are widely used in Mexican cuisine for dishes such as moles, chilli sauces and stuffed preparations. Ancho 211 is bred to provide more consistent heat and performance for both growers and cooks.

As a hybrid, Ancho 211 does not breed true from saved seed, distinguishing it from heirloom, landrace and open-pollinated ancho cultivars.
