About this pepper

Ancho Gigantia, sometimes spelled Ancho Gigantea, is a traditional Mexican Capsicum annuum cultivar within the ancho and poblano group. It produces thick-walled, heart-shaped fruits typically 4–6 inches long that mature from dark green to red.

When harvested green, the fruits are commonly used as poblanos for stuffing, roasting, grilling and dishes such as chiles rellenos. Once fully ripe and dried, they are known as ancho chillies and are used in sauces, powders and traditional Mexican dishes including mole.

Ancho Gigantia is mild in heat and valued for flavour rather than pungency. It forms part of the broader family of poblano and ancho peppers selected and cultivated in regions such as Puebla for generations.

As an open-pollinated cultivar, Ancho Gigantia can be grown from saved seed with reasonable consistency. It is not a wild or landrace population and remains a popular choice for both home gardens and farm production due to its yield, versatility and long-standing culinary use.
