About this pepper

Bishop's Crown Peach is a peach-coloured Capsicum baccatum cultivar grown for the same distinctive crown-shaped fruit that made the Bishop's Crown line well known, but with a softer peach ripe colour instead of the usual red. In circulation it is described as a sweet, fruity pepper with appley undertones and the crisp, juicy texture associated with this line, giving it a strong fresh-eating and kitchen profile rather than being grown only for appearance.

The plant is vigorous and productive, usually forming a tall, branching frame around 1.0 to 1.2 m high, with green foliage and a heavy set of thin to medium-fleshed pods. The fruit keeps the classic Bishop's Crown form, with broad winged shoulders and a central raised section that creates the bishop's-cap silhouette. Pods are commonly about 4.0 cm across, crisp rather than thick-walled, and carried in good numbers across a long season. They begin green and mature through to a soft peach colour, which gives the plant a warmer and more unusual presentation than the standard red form.

Its flavour is one of its main strengths. The peach form is described as sweet, fruity, and bright, with enough heat to stay lively while still being easy to use across a wide range of dishes. That balance makes it well suited to fresh slicing, salads, stuffing, grilling, pickling, salsas, and sauces, where the crisp flesh and fruity baccatum character can stand out clearly.

Bishop's Crown Peach sits within the older Bishop's Crown tradition associated with Barbados and wider grower circulation beyond the Caribbean, but this peach form is treated in current trade as a distinct colour selection valued for its softer ripe colour and high-flavour fruit. Its identity is built around that combination of the classic crown-shaped pod, crisp texture, sweet-fruity flavour, and the uncommon peach finish that sets it apart visually from the more familiar red line.
