About this pepper
Bulgarian Carrot, also known as the Shipka pepper, is an heirloom Capsicum annuum variety originating from Bulgaria. The plant typically grows between 45 and 60 centimetres in height and is well adapted to cooler growing conditions.
The pods are slender and conical, usually measuring between 8 and 10 centimetres in length. They mature from green to a bright orange colour, giving rise to the common name due to their carrot-like appearance. The texture is crisp, and the flavour is sweet and fruity with a moderate heat level.
The variety became more widely known outside Eastern Europe during the 1980s and is commonly used in salsas, chutneys, and pickling.
