About this pepper

“Cabai Besar” literally means “large chilli” in Indonesian. It is not a single fixed commercial variety name, but a broad local category used across Indonesia for large-fruited red chillies in everyday cooking.

Most Cabai Besar types produce long, smooth-skinned pods, typically about 10–15.5 cm long and 1.5–2 cm wide. Fruit are pendant and ripen from green to bright red. Some strains are slightly curved while others are straighter. Thickness and shape vary by region.

Heat level is generally described as moderate. Reported Scoville values vary widely. Many Indonesian agricultural and seed listings describe it as milder than Cabai Rawit but hotter than sweet peppers. Estimates commonly fall between 10,000 and 20,000 SHU. A working value of 15,000 SHU reflects a mid-range estimate rather than a fixed standard.

Plant height is variable depending on strain and growing conditions. Many field-grown plants reach around 60–100 cm, while smaller backyard-grown types are also common.

Culturally, Cabai Besar is one of the main chillies used in Indonesian cuisine. It is used fresh, blended into sambal, cooked into sauces, stir-fries, and curry-style dishes. It is widely traded in Indonesian wet markets, and price fluctuations are regularly reported in national news due to its impact on food costs.

Cabai Besar represents a market category rather than a single genetically fixed variety. Multiple local landraces and modern selections are sold under the same name, which results in variation in pod size, heat level, plant height, and yield between regions and seed sources.
