Cajamarca
Cajamarca is a Capsicum chinense variety originating from the city of Cajamarca in northern Peru, a region located at approximately 2,750 metres above sea level. The variety is adapted to highland growing conditions and represents a traditional regional pepper type.
The plants produce elongated, habanero-type pods measuring around 6 to 7 centimetres in length. The fruits undergo a distinctive ripening sequence, transitioning from pale yellow to purple, then orange, and finally bright red at full maturity. The flesh is medium thick.
The flavour profile is aromatic and intense, featuring a spicy citrus fragrance with classic fruity undertones associated with Capsicum chinense. Plants typically reach between 60 and 90 centimetres in height and are capable of producing good yields, with harvests often beginning around 80 days after transplanting.
