About this pepper

Cotton Candy Scotch Bonnet is a modern United States Capsicum chinense hybrid developed at Innovation Acre by Steve Bender. It was created from a cross between Cotton Candy Habanero and Yellow Scotch Bonnet, and it was already being circulated as a new Tyler Farms offering in early 2022. Its identity centres on combining the sweet, tropical character associated with the Cotton Candy side with the rounded, bonnet-style heat and culinary profile expected from a Scotch Bonnet line.

The fruit is distinctly bonnet-shaped, with squat, rounded pods that develop a noticeable purple blush during ripening before finishing in a soft peach shade. That shifting colour pattern is one of its defining visual traits, and grower-facing descriptions repeatedly highlight the contrast between the early dark blush and the mature pale peach finish. Plant photographs associated with the variety show green foliage and darkened stems carrying clusters of peach and purple-blushed pods.

In flavour descriptions, Cotton Candy Scotch Bonnet is consistently presented as sweet, fruity, and tropical, with some sources also calling out citrus notes. Its heat is described as classic Scotch Bonnet intensity rather than superhot territory, and grower references place it in the broad Scotch Bonnet range around 100000 to 350000 SHU. The variety is especially associated with hot sauces and Caribbean-style cooking, including jerk dishes, where its sweeter fruit profile and bonnet-style burn are treated as part of its appeal.
