About this pepper

Khang Starr Peach Starrkist Yellow is a yellow-fruited form sold under the Peach Starrkist name, tied to Khang Starr’s Capsicum chinense breeding line from the United States. The Peach Starrkist line was created from MOA Scotch Bonnet x Bahamian Goat and is consistently described as part of the same family as KS Lemon StarrBurst and Scarlet Rose. The parent line was already being documented publicly by October 2018, received a pod review in July 2019, and by May 2022 Khang Starr’s creations were being discussed in the context of approved seed sales. The exact yellow-named form appears in public retail listings by April 2026. Within chilli grower circles, Peach Starrkist became popular for its combination of attractive bonnet-type pods, productive plants, and a sweet, fruity flavour that made it useful both as a garden showpiece and as a sauce pepper.

Plants are described as vigorous and highly productive, usually reaching about 122.0 to 152.5 cm tall, with many reports of plants carrying more than 100 pods. The fruit is typically bonnet-shaped to rounded, sometimes with a small stinger or tail, thick-walled, and about 4.0 to 5.0 cm in size. Across the Peach Starrkist line, growers consistently describe the pods as sweet, fruity, floral, and tropical, with heat around habanero level. The yellow form is described as ripening from green to bright yellow, while keeping the thick walls, heavy production, and aromatic character that made the line well known. It is regularly described as well suited to hot sauces, salsas, drying, and other flavour-forward uses where the fruit’s sweetness and citrus-fruity notes can carry through.
