About this pepper

Rooster Spur is a rare heirloom Capsicum annuum pepper from Laurel, Mississippi, preserved by the Ainsworth family for over 100 years. It was traditionally used to make Rooster Pepper Sausage and is closely tied to Southern food traditions.

Plants grow to around 60 centimetres tall and produce upright, tapered pods approximately 5 centimetres long. Fruits mature to a bright red colour and are firm with thin walls.

Heat levels average around 40,000 Scoville Heat Units, similar to cayenne peppers. Rooster Spur is commonly used for pickling whole, drying, and grinding into powder and is valued for its strong flavour, productivity, and historical significance.
