Information

The Tabasco pepper is a Capsicum frutescens cultivar originating from the Mexican state of Tabasco. Unlike many chilli peppers, Tabasco peppers have a juicy interior, which contributes to their use in sauces. The small, elongated pods are usually about 4 centimetres in length and mature from yellow-green to bright red. The cultivar gained international recognition as the key ingredient in Tabasco sauce, developed by Edmund McIlhenny in Louisiana in the late 19th century.
