Urfa Biber, also known as Isot pepper, is a traditional Capsicum annuum chilli from the Urfa region of southern Turkey. The word “biber” means pepper in Turkish. Pods mature from green to a deep maroon colour on the plant. After harvest, they undergo a distinctive curing process, sun-dried during the day and wrapped at night to sweat. This method preserves natural oils and moisture and develops a dark purplish-black appearance when fully dried. The flavour is complex and rich, commonly described as smoky with raisin-like and earthy notes. Heat levels are moderate and lingering, averaging around 7,500 Scoville Heat Units. Urfa Biber is protected by a geographical indication in Turkey under the name “Urfa isot pepper” and is widely used in regional cuisine.
