Wildcat

Wildcat is a modern cayenne pepper hybrid from Bayer Seminis that entered public circulation as a 2023 All-America Selections regional winner, with the first clear public announcement appearing on 14 July 2022. It is presented as an early-maturing hot pepper bred for strong vigour, a good leaf canopy, and higher marketable yield with fewer sunburn losses. The line was trialled and promoted as a fresh-market and home-garden cayenne rather than as a traditional small thin-walled drying type, which is a major part of its identity.

The plant is upright, compact, and well branched, usually reaching about 91.5 to 106.5 cm tall, with dark green foliage and a strong canopy. Live descriptions emphasise its even growth habit and ease of harvest, and retail growing descriptions state that plants can produce around 20 to 25 fruit. Park Seed also notes resistance or tolerance listed for PVY:0, Tm:0, and intermediate resistance to Foc.

Its fruit is the standout feature. Wildcat produces large, long cayenne-type pods with thick, fleshy walls, a straighter form than standard cayennes, and a ripe red finish after starting green. Public AAS and retail descriptions repeatedly describe fruit at about 20.5 cm long and 2 to 3 ounces in weight, with smoky flavour, peppery sweetness, and mild pungency. Bayer's official profile also places it in the cayenne segment, describing large long red fruit, early maturity, and strong vigour.

Wildcat is positioned as a multi-purpose kitchen pepper rather than a novelty line. Live sources describe it as suitable for fresh use, pizza topping, stir-fry, drying, red pepper flakes, and cayenne powder. Its reputation is built on combining cayenne flavour and shape with unusually heavy flesh, easier harvest, and a lower heat level than many traditional cayennes, which is why it was singled out in the AAS trials.
